traveling oats

My oats went on an adventure around the reading/yoga/fireplace/bar room today.  Is that a multipurpose room or what?

Cinnamon Chia Scottish Oats

  • 1/4c scottish oats
  • 1 1/4c water
  • 1/3c almond milk
  • 1T chia seeds
  • 1t cinnamon
  • 1/2 banana

Layered with:

On the fireplace.  And then, in my stomach :)

Had an awesome 45min swim today.  My quad felt great, no twinges at all.  However, I know it’s still injured, but at least I’m seeing progress!

Lunch was: 2 pour, poke, + spread eggs + local whole wheat organic tortilla [YUM] + tomato paste

Plus a muddy milkshake:

  • lotsa’ ice
  • 1c Silk almond milk
  • 2T Living Harvest vanilla spice hemp protein powder
  • 1 scoop chocolate amazing grass 
  • cinnamon

Looks gross.  Tastes good.

Then I sterilized jars in hopes of making nut butters + other baked goods for the winners of my giveaway [from the other week].

But then, my stomach was starting to moan.  I blame it on yesterday’s lame greasy veggie burger.  Gr.

THIS is my favorite GT’s Synergy Kombucha!!!  It’s the Trilogy flavor.  With a mild sweetness, tons of flavor + fizz and a lot of ginger, this drink is top notch.  Chris picked one up for me in hopes that the ginger would calm my stomach.  30min later I was feeling much better!

However, if you can’t tell by my less-than-enthusiastic post, I’m still feeling a bit off.  I want to get a good night’s sleep [unlike last night] and hope to feel better in the AM so I can get to my nut-butter extravaganza.   

I think I forgot to tell you that I’ll be traveling to Cleveland next week to visit my family!  I’m extremely excited because I haven’t been home since December, which is far too long!  My mom made a Colorado appearance in April, which was fabulous but I need to see her again and everyone else!  I’m going to be home for about 12 days, which is awesome but also sad because Chris cannot come with. 

Aaaand actually we won’t see each other for about a full THREE weeks.  This has happened a few times before, during college, and I’m not a fan.  So why three weeks?  Well, Chris is traveling to Ecuador 2 days before I get back to Colorado.  He’s going on a small trip with a non-profit engineering group [Engineers Without Borders] here in CO.  The focus of the project they’re working on is to develop and sustain a potable [drinking water] and irrigation system in a small group of villages in Malingua Pamba, Ecuador. 

Aaaand this also means we’re going to be in two different countries on our 2nd wedding anniversary.  I’ll actually be on a plane most of our anniversary day, flying back to Colorado.  How romantic.  While it will be a bit sad, I’m so excited and proud of what Chris is going to be doing in Ecuador.  We have many more years to share that day together.  But for this year, we can celebrate when we gets back.  :)

Time to read a little Barefoot Running [which is blowing my mind] and then off to bed.
