birthday eats

Well, you already saw my breakfast, but here are the details:

Udi’s GF bread + 2 eggs + mushrooms + tomato + mozzarella + spinach

The perfect breakfast sandwich combination.

Lunch?  Birthday party leftovers crumbled on top of a salad.

Huuuge bed of local kale + romaine, hidden with: bean burger crumbles, local tomato/mushrooms/basil/zucchini/peppers, fresh mozzarella, avocado + cannellini beans.  Topped with: hemp oil + balsamic vin + apple cider vin

So what did I do for my birthday?  Not much at all, and it was extremely fabulous!!!  We went out to breakfast with friends, I opened some gifts, and then lazed on the couch.  A rarity!  There were a few short storms that rolled through, but after we walked downtown to do a little birthday shopping.  Didn’t find much, and a few stores were closed already, because we forgot it was Sunday!  We got in a ton of walking yesterday, which was the perfect birthday exercise.  For dinner we headed to our favorite local spot, Tasty Harmony.  

Chris got the mock “chicken”, which is homemade breaded seitan, mashed taters + gravy, collard greens + pinto beans.  Chris says, this is one of his favorite meals ever!

The iPhone photo, does not do it justice.  The gravy is outstanding, and when I was eating gluten, the mock chicken tasted like no other seitan I’ve ever had!

I ordered the yogi plate, which includes:  grilled to perfection tofu, tahini dressing, millet + quinoa, collard greens, avocado + tomato.

My birthday went way too fast.  I don’t kick back and relax too much, so yesterday was thoroughly enjoyed.  We’ll just have to do that more often.  After dinner, we met up with Eric + Kelsey at Equinox for a 1/2 pint of my favorite Brown Ale.  Then, Chris + I headed to a friend’s house for a little fireworks display.  Then, I fell asleep on the couch.  At midnight.  Party animal!

Oh, and don’t worry.  There was plenty of leftover dessert from my party. 

Every time I went into the kitchen, I took a celebratory bite of cupcake.  More details on these delicious cupcakes in my bday party recap!
