breakfast is my favorite meal
/I worked from 10-6 today and I didn’t get home til 7:30 after a few errands so not much got accomplished today. I would however call breakfast an accomplishment though. It was delicious!
Sprouted wheat bagel – SO delicious, found in the freezer section.
1/2 bagel topped with:
- ~1/4c plain Greek yogurt
- 1/4t cinnamon
- 1t maple syrup
- 1 strawberry
The other half? A new twist on Banana Scramble. This was REALLY good.
Oatterific Banana Scramble
- 2/3 banana
- 1t vanilla
- ~3T milk
- 1/2t cinnamon
- 1T peanut butter
- 2-3T rolled oats
- Heat a greased pan over medium [or a little lower].
- Add all ingredients to a small bowl and mash with the back of a fork.
- Add more milk to reach desired thickness.
- Cook until browned + flip to brown other side.
This combination used oats instead of coconut. I added a little more milk and left out the maple syrup. It was sweet enough from the banana for me. The oats gave an awesome texture and actually kept the “scramble” in one piece. It browned enough that I could flip the whole thing over [carefully], but it was definitely very soft and gooey on the inside. It was nothing like a pancake.
The oats are definitely a keeper in this recipe!! Other things you can use to help bind it together are shredded coconut or ground flax meal. I’m sure you could also add flour instead as well. This was extremely tasty and I loved the contrast with the cold mixed berry jelly.

When I got home, Chris + I headed out to our favorite spot, Vine Street Pub. It was delicious as always. I started out with a 16oz Quinn’s Golden Ale [one of the beers they brew]. I haven’t ordered a full beer in quite some time. I usually just get their 8oz glasses. I’m such a lightweight! It was delicious + refreshing after a long day on my feet.
Every day they feature a different hummus flavor, which I love. This is where I got the idea to make my curry honey hummus, which was what they had on special tonight. I had to get some to see how it compares to the recipe I made up.
It was delicious but a little different than mine. I think mine is a bit more robust tasting and they add some sort of green herb in theirs. I couldn’t put my finger on what it was. I am almost sure it’s mint but Chris thought maybe basil. It wasn’t cilantro, so I guess the only other possibility would be parsley. Either way, I’m keeping my recipe the way it is :)
I obviously brought my sad sad point n’ shoot camera. I could hear the guy at the table next to us comment about me taking food photos in a shocked/weirded out way. I just turned and said “Hii, yah I take photos of my food..I have a food blog!”
Okay, so this isn’t the most appetizing looking thing, but it was completely fabulous.
- beer baked tempeh [they bake it in one of their house brewed beers]
- guacamole
- salsa
- vegetarian green chili [which was flipping amazing]
- chips on the side that I dipped in the hummus
It came with a bun that I ate the bottom half of. I always get too full eating a whole bun and can never finish the actual contents of the sandwich, so I just leave the top half off. The flavors rocked. I was stuffed + so very happy.
We can never get enough Vine Street!!!
I have to work tomorrow from 3-11:30pm. The store closes at 10pm but then there is a lot to do once it’s closed. I don’t have any concrete plans for the morning. One thing I know is that I need a solid night of sleep. I’ve been waking up a lot from the dogs or Chris getting up earlier than me, etc. and haven’t slept for over 6hrs straight in like 2wks.
So I’m hoping for at least 7hrs with no interruptions. It’s supposed to be nice out so taking a walk at the park sounds good but I’ll be on my feet at work all day, so I’m not sure i want to take a 3 mile walk. Maybe I should just relax + read. I have a hard time not keeping busy 24/7 but I think I need it. We’ll see how I’m feeling in the AM!
Any good plans for Sunday? How much sleep to you get in a night? Night owl or morning person? I’m definitely a night owl but pretty good at getting up in the morning too.
