finger socks

Chris was out of the house early this AM which left Peter [our college friend], myself, the dogs, and a huge tub of oats.  What to do…..

Obviously..a DOUBLE batch of banana oats!  Last night I asked Peter if he liked oatmeal, as any normal person would ask.  He responded with a “yeah for sure” and then also said he has tried making regular oats but it takes SO much added sugar to make them taste edible.  I told him, prepare to be amazed. 

Double Batch:

  • 2/3 oats
  • 2.5c liquid [almond milk/water]
  • 2 small bananas
  • vanilla splash
  • 1/2t cinnamon
  • toppings: PB, jam, walnuts, granola

He was shocked that I didn’t add sugar [except for the very small amount in the jam I added].  Our bowls were scraped clean :)

Lunch:  Smoothie + Apple Burrito

This smoothie was “okay.”  Didn’t really do it for me.

HOWever.  Apple Burrito?  Spot on. 

  • 1 tortilla
  • 1 thin sliced apple
  • 1/4t cinnamon
  • 1T almond or peanut butter
  • 1t coconut butter

Bake at 450* for 5min.  YUM!

My plan today:  Run to the gym [.75m] –> stationary bike for 25min –> Run around the park and home [2.25m]

My workout plan was a success!  When I came home I wanted to give myself a push-up test because I was pretty sure the Plank-Ups I was doing for Whittle My Middle, really got my arms into shape [as well as my core].  I did 29 without stopping…not too shabby!  Then I did some light lifting and stretching.  I was talking to Laura, who is going to be training for the 1/2 marathon with me.  In talking to her I realized that I CAN’T COUNT and should have already started my training last week.  WHOOPS.  When I have my plan set, I’ll let you all know what it looks like! hehehe Apparently I need to brush up on addition!  My body felt great today [other than some lingering soreness from snowboarding].  I thought after biking my legs would feel heavy but they didn’t at all.  I LOVE the Vibrams for making my legs feel light!  I had a pretty good pace going…now if I only had a Garmin to figure out where I’m at!  I normally run around a 10min mile pace.  I also iced today as precaution but am excited that my feet are feeling great.  I think I’m ready to start training!!  I really hope to make it all the way through but I’ll take it one day at a time :)

Post workout delicious snack –> KIDZ Amazing Grass Chocolate + Chocolate Almond Milk –> Pour in a bottle –> Shake –> Drink = SO very tasty!!!  Nice + chocolately…mmm

I felt like Indian flavors tonight and was craving my Coconut Rice!!!  If you haven’t tried making it, you must!  I picked up this sauce recently and was excited to use it.  The ingredient list was completely recognizable.  I could make it at home if I only knew the proportions ;)

Indian Stir Fry

  1. Saute red pepper, onion and Tempeh in a pan for ~7min.
  2. Add in sauce of choice + kale.
  3. Cook another 3min.
  4. EAT with coconut rice!!!

Tonight’s Coconut Rice:

  • 1/2c sweet brown rice
  • 1/2c long grain brown rice
  • 1T organic unrefined coconut oil
  • 1/2c coconut milk [not low-fat]
  • 1.5c water

[I also make this with jasmine rice. Adjust liquid amounts depending on what type of rice you use and how much]

  1. Combine all ingredients in a saucepan.
  2. Bring to a boil, stir once and cover.
  3. Reduce heat and simmer for ~50min until liquid is absorbed.
  4. Take off heat and let sit, covered for 10min.
  5. Fluff with fork.

Believe me, you will love it.  It’s the creamiest rice you will ever eat and has a mellow coconut flavor.  OH MY YUM.

If you’ve never experimented with coconut oil, you can get really good deals online [like iherb.com].  Whole Foods also has their own brand that is probably one of the cheapest I’ve seen.  It will set you back around $6-10 for a jar, but it will last you for awhile.  I’m not going to bore you with all of the reasons that I love coconut oil.
