thank you

Thank you all, SO much, for your amazing comments, thoughts, prayers, etc.  You all helped to keep me smiling today!  I truly appreciate your kindness! <3 <3

Chris, the dogs, and I went to the mountains for some snowboarding today.  I thought it would be good to get out of the house, get a little workout in, and get my mind off things.  It definitely helped. 

After, we stopped at the store to get things for dinner.  I think I must like to stay busy/distracted, with my normal routine, in times like this.  I found a recipe in last month’s issue of Real Simple.  It was cheap, easy, and sounded super tasty! 

The total cost per plate was $3.75, even with a baguette and 1lb of Boulder Sausage.  The sausage was infused with white wine, merlot, sun dried tomato, and asiago cheese. It was delicious! I’ll get the full recipe up soon, but here were the ingredients…I changed a few of them, of course ;)

  1. 1 bunch kale
  2. 2 cans cannellini beans
  3. 1lb sausage
  4. 2 red peppers
  5. 3T breadcrumbs
  6. 2 garlic cloves
  7. olive oil, s+p

A few quick snaps from tonight’s meal…it gets dark SO early now!! I’m never going to get crisp, pretty dinner photos.  Lunches will need to get more exciting!

I have some projects that MUST get done this week, so my posts may be a bit shorter this week.  I also really need to plug away and get the page tabs at the top filled with content!

1 more thing!  I am pretty excited about this!!  I am entering the POM Recipe Contest. I know it is a long shot, but why not!?  I already know what I’m going to make but need to start playing in the kitchen.  The submission is due in at the end of November.  I’ll give some snippets as I work on the recipe =)
