travel day
/We weren’t leaving for the airport until 11am today, but I was still in a rush. I got up at 7:45 to take the dogs running. I run both of them separately for about 2.5 miles each. It’s more exhausting than running by myself! Dakota, our boxer, is pretty good on leash but Kenna [10 months] still has a lot to learn :)
Look how excited Dakota was for the run, haha – She’s wearing a harness that helps with the pulling…but she doesn’t pull much anyway. She is so depressed!! Actually she was super pumped about the run…she just always looks like this.
By the time I was done with that and all showered it was already 9:30! I still had to eat, pack a few things, dry my hair, and fold some laundry. Eeek!
I knew I would be a bit rushed so last night I made overnight oats. I knew I wouldn’t have time to cook oats on the stove. I wanted to be able to just chow down after my shower. And chow I did…I ate way too fast, but it was extremely yummy. It was really chilly this morning so I had to give the oats a quick zap in the microwave…there is something more satisfying about warm and creamy oats. I like them cold in the summer though!
Double Pumpkin Overnight Oats:
- 1/3c. rolled oats
- 1/3c. stonyfield pumpkin yogurt
- 1/3c. 1% milk
- 1/3c. pumpkin puree
- 1/2tsp pure maple sugar
- 1/4tsp. cinnamon
- shake or 2 of cloves + ginger
extras added in the AM:
- chia seeds
- dollop almond butter
- hempseed granola

I got plane snacks ready x2 cuz the hubs was coming with me for this trip :) I never like getting soda or sugary juice while on the airplane so I had the idea to bring along a few tea bags. It was the perfect pick me up on the plane!! I made a pnut butter samich for myself and Chris had cashew butter, on bread from Udi’s bakery. We both took the Immune Defense Emergen-C before leaving [per usual]. The Chocolate Mint Jocalat Larabar is just okay. The mint flavoring isn’t my favorite. I really only like 3 of her bars: Peanut butter + Jelly, Pecan Pie, and Chocolate Coconut [although you can’t really taste the coconut]. I have tried most but not all of the flavors. We are both LOVing the KIND bars!!
So, the story about my terrrrrrrible persimmon from the other day..MY BAD!! There are TWO kinds of persimmons!! After I posted I looked them up to see what I could find because I knew something was up with my bad experience.
I got the kind that takes much longer to ripen. They look perfect in the store…super bright and a little give. Little did I know it needed to sit on my counter for a good 2 weeks before I tried eating it!!
This type is round and squatty and is called FUYU. This one was super ripe! I guess you can eat this kind when they are firm though. The skin kind of peels away and I ate the inside of it but you can eat the skin as well. It was extremely juicy and sweet but didn’t have much flavor. It had a great consistency, similar to a mango. Hopefully I can find one with flavor now!
Fuyu next to a Hachiya. The Hachiya is the one I tried the other day that gave me EXtreme cotton mouth ;) I have 2 Hachiyas waiting patiently on the counter for me. Thanks to all who left me comments about this mysterious fruit.
Guess what?? Denver airport is all about the Caribou!! They might have Starbucks but I didn’t even see one. Ahhh, I love Caribou SO much more than Starbucks.
The Chai Tea Latte was vanilla-ey and spicy and so delicious. It was not oversweet or over-spiced like SB’s was the other week.
Goooodnight! I’m pooped from the travel day…although the flight was great! We flew on Frontier Airlines who has the option to purchase Direct TV with about 30 channels for $6. It was totally worth it because we had a straight through flight that was about 2.5hrs long. I had a lot of writing to do [for a few different things] so it was nice to have on in the background.
