7. Gluten-free [and vegan] treats. 

All of the baked goods were from City Cakes & Café in SLC.  I was very impressed by the flavors and textures of everything you see below.  I also tried their GF/vegan sandwich bread and was blown away.  The texture was fluffy, the slices were full-sized, and it was tasty toasted or just straight up.  I wish they shipped!  All of their baked goods are vegan and about 1/2 are also gluten-free.  Definitely check them out if you’re in SLC!

Last week we went on a much needed ski-cation [which you probably noticed].  You may be wondering, why does someone living in Colorado go somewhere else to go skiing/boarding?  Or, the more probable question, wouldn’t you want to go some place warm? 

Even though the mountains are just under 2 hours away making weekend ski days doable, taking a whole week off to ski/board is one of our favorite things to do.

  • no 5am wake up calls in an attempt to beat traffic
  • no fighting traffic at 6am in bad weather
  • no 4 hour traffic jams on the way home
  • no lift lines
  • a much less crowded mountain
  • getting in consecutive days on a mountain is FUN and rare, unless you rent a condo for the winter

First we headed to Avon, CO for the Winter Wondergrass bluegrass festival with a group of friends.  We had this part of the trip planned for awhile, so we figured why not continue on for more mountain time and an actual vacation? 

Next we drove to Park City, UT to the Canyons Resort which is included on our ski pass.  Meaning, no extra cost for lift tickets [our main reason for heading to Utah].  Bonus!  Also, we were able to drive to Utah, so we basically just had to pay for our lodging and a few meals out.  We had a small kitchen in the room, so breakfast + lunch were quick and doable after a trip to the grocery store.  It was super affordable and fun to get away to a new location!  Until I got sick and the hotel lost my snowboard [they’re “investigating” – ha!]…BUT, other than those two things the trip was fabulous and relaxing.  For once, time actually slowed down.  It was kind of amazing.

It’s easy dwell on the not-so-great, challenging, daily life things while really great things may be happening at the very same time.  I often get caught up in day-to-day stress and busyness and forget to take a step back instead of focusing on 1 day or 1 week.  Sometimes it feels like I'm walking backwards but when I actually remember to think about the entire past year I realize I've taken a big leap forward.

I try to not over-photograph my life, staying more present in the moment and making mental photos in my mind, but the photos I do take make the memories last forever and help me to continually appreciate this lovely life.  Turning 30 has brought many new challenges and a whole lot of perspective into my life.  Easier is not always better.  Challenges bring growth.  Happiness is sometimes a choice.  I'm being shaped by these experiences and am very slowly--very slowly--learning to take the bumps in stride and push on.  The photos above are my reminders. <3
