curry guacamole

I’ve been a porch painting machine this week.  Also caulking, spackling, sanding, priming, + so forth.

All of that on top of an already busy week equals a tired + brainless Ashley.  And guess what slick move I made today?  While painting the ceiling of the porch a gigantic glob of paint fell right onto my eyeball.  So that was fun…

Despite my brainless brain, I have a little recipe to share with you. 

Just be thankful you aren’t getting the recipe for chilled coconut soup I made the other day.  Two versions were made, one which I hemmed + hawed about sharing and one which I promptly spit into the sink.  We’re just not even gonna’ go there.

Remember my curry honey hummus from way back when?  It’s definitely one of the top 5 most popular recipes on the blog.  After you make this guacamole you definitely need to check out the hummus.  While you’re at it, you can also make my veggie coconut curry and have a little curry party.

Curry Guacamole

gluten-free, dairy-free (vegan option)

  • 2 avocados
  • 1/4 cup red onion, diced
  • 2 teaspoons minced ginger
  • 1 teaspoon curry
  • 2.5 teaspoons lime juice
  • 1 teaspoon lime zest
  • 1 teaspoon honey
  • 1/4 – 1/2 teaspoon cayenne [optional]
  • 1/4 – 1/2 teaspoon salt
  1. Slice and pit the avocados and scrape the pulp into a bowl.
  2. Add in all the other ingredients and mash until just combined.  [Or if you prefer, mash until creamy.]
  3. Garnish with a little extra red onion and sprinkle of curry if desired.

notes: Sub maple syrup or agave for the honey to make this vegan.

Chip tested + approved.

Well, I’m back.  Back after a very busy [but fun!] weekend.

Back with a recipe you need to make TOday!

I realize it’s not officially summer, but I’m still calling this summer guacamole.  If the weather doesn’t feel like summer where you are, eating this surely will.

My fascination with avocado is at an all-time high. 

I apologize if you are not a fan. 

It started with this.

Which then led to this.

And now we have this.

It was just the next obvious step.

Summer Guacamole

gluten-free // serves 2-4

  • 1 large avocado
  • 1 lime [~1 Tablespoon juice]
  • 1/4 cup + 2 Tablespoons strawberries, finely chopped
  • 1/4 cup + 2 Tablespoons blueberries
  • 2oz soft goat cheese
  • 1 Tablespoon green onion, finely diced
  • 1/2 Tablespoon jalapeno, de-seeded + finely diced [optional]
  • 3/4 teaspoon raw honey
  • 1/4 + 1/8 teaspoon salt
  1. Mash the avocado with 1/2 Tbsp of the lime juice and honey.
  2. Gently fold in the strawberries, blueberries, green onion, jalapeno, and salt.
  3. Crumble the goat cheese over top and gently fold in.
  4. Place in a bowl and top with 1/2 Tbsp lime juice and a sprinkle of sea salt.  Optional – Top with more blueberries and diced strawberries if desired.

note: Add more jalapeno if desired.  The spice level can really vary so be careful when adding.  The lime juice is added for flavor and to help prevent browning.  Store tightly wrapped in the fridge but best when served immediately.

This guacamole pairs really well with a spicy chipotle tortilla chip!

Slightly sweet + tangy, with a juicy bite, and a little kick of heat.

Like summer on a chip!
