href="http://colorado.doortodoororganics.com/boxes?session_id=&amp;user_id=&amp;">here</a>.&#160; If I would buy all of this at my local natural food store, it would have cost about $22-25, with current pricing.&#160; It’s very close to being the same and the delivery is such a nice bonus.&#160; Plus there are a million things you can add to your delivery.&#160; It’s basically a whole grocery store!&#160; They even have sales, special Valentine packages, and local products as well.&#160;</p><p>I wasn’t paid for this review.&#160; I’m just really excited about this company!&#160; They’re going to be offering a special promotion for my readers too.&#160; I’ll give you the details soon.</p><p><a

title="(4 of 12)" style="border-top-width: 0px; display: block; border-left-width: 0px; float: none; border-bottom-width: 0px; margin-left: auto; margin-right: auto; border-right-width: 0px" height="353" alt="(4 of 12)" src="http://edibleperspective.com/wp-content/uploads/2011/02/4of12_thumb1.jpg" width="530" border="0" /></a></p><p>I was finally able to get back to the pool today.&#160; It has been almost a full three weeks [flu + sinus problems], which is just way too long.&#160; I was shocked, because I felt like I didn’t lose any stamina at all.&#160; I was sore from a few spills I took snowboarding, but had a great first day back in the water.&#160;</p><p>Typically, I don’t have a problem getting motivated to workout.&#160; However, when I take that much time off, it’s always harder to get back into it for the first few days.&#160; I have ridden my indoor bike trainer a few times + walked the dogs, but have spent most of the last few weeks parked on the couch!</p><p><strong>swimming breakdown:</strong></p><ul><li>100m kickboard warm up</li><li>500m freestyle</li><li>250m breast stroke</li><li>250m aqua jogging</li><li>500m freestyle</li><li>250m breast stroke</li><li>250m aqua jogging</li><li>50m kickboard cool down</li></ul><p><strong>Total Distance:</strong>&#160; = 1.33 miles in 1hr 7min</p><p>I think something that helped keep me going was the thought of lunch.&#160; I had something planned!</p><p>A new socca recipe, just for you!&#160; Socca comes from French cuisine and is basically an unleavened bread made from chickpea flour.&#160; It’s not sweet at all, but has a mild chickpea flavor and a thick/dense consistency.&#160;&#160; I’ve made a few <a
href="http://edibleperspective.com/2011/01/detox-day-1-overview-recipes/">different</a> <a

color="#ff0000" size="3"><strong>Herbed Socca</strong></font> [serves 2]</p><ul><li>1 1/4c chickpea flour</li><li>1c water</li><li>1T olive oil</li><li>1T unsweetened apple sauce</li><li>1/4-1/2t salt</li><li>1/2t garlic powder</li><li>1.5t dried oregano</li><li>1t dried parlsey</li><li>1/2t dried basil</li><li>1t dried rosemary</li><li>black pepper</li></ul><ol><li>Preheat your oven to 375*</li><li>Line the bottom of an 8-9” round pan with parchment + grease the bottom and sides.&#160; If you don’t have parchment, that’s fine, just grease the entire pan.</li><li>In a bowl mix all of the ingredients together.</li><li>Pour into the pan and bake for 40min, until cracked on the top with browned edges.</li><li>Let cool for a few minutes, then slide a knife along the edge.</li><li>Put a plate upside down on top of the pan and flip the socca out.&#160; It should come out easily.&#160; If you used parchment you might be able to just pull it out.</li><li>Top with pizza ingredients and bake on a pan for another 5-8min, until all ingredients are hot/melted.</li></ol><p>I made a batch of my <a
href="http://edibleperspective.com/2010/07/hungry/">pizza sauce</a>, which I love love love.&#160; I eat it by the spoonful while it’s cooking. <img
src='http://edibleperspective.com/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' /> &#160; You can adapt it to whatever Italian seasonings you have on hand.&#160; <strong>I also added</strong> 2-3T of apple cider vinegar, which really brings the whole sauce together.&#160; Today I used my immersion blender to smooth it out a bit.&#160;</p><p>After I smoothed out the sauce, I added about 4c of fresh spinach to to the pan.&#160; It wilted down and was the perfect veggie addition.</p><p><a

color="#000000">[serves 2-4]</font></font></font></font></p><ul><li>1/2 butternut squash, peeled + cubed [medium size]</li><li>2T olive oil</li><li>1T rosemary, chopped fresh</li><li>1t garlic powder</li><li>1/4t salt</li><li>fresh ground black pepper</li><li>1 medium red onion</li><li>goat cheese</li><li>crunchy topping [like roasted pumpkin seeds]</li></ul><ol><li>Roast butternut squash with 1T olive oil, rosemary, salt and pepper at 400* for about 40min, turning once or twice.</li><li>While squash is roasting, cut onion parallel with the ends, to create circular cuts about 1/2” thick.</li><li>Over med-low heat, sauté onion rings in 1T olive oil for about 5min per side.</li><li>Let squash + onions cool for about 5min before topping on salad.</li><li>Top lettuce with squash, onions, cheese, and pumpkin seeds.</li><li>Pour on dressing.</li></ol><p><font

isPermaLink="false">http://edibleperspective.com/?p=11091</guid> <description><![CDATA[<p>I’m trying to get back in my normal routine of working out.&#160; I’ve had a few weird things happen in the past month that set me back a bit.&#160; About 4 weeks ago, I pulled my quad, sprinting around the bases in the summer softball league Chris + I are playing on.&#160; I hobbled around [...]]]></description> <content:encoded><![CDATA[<p>I’m trying to get back in my normal routine of working out.&#160; I’ve had a few weird things happen in the past month that set me back a bit.&#160; About 4 weeks ago, I pulled my quad, sprinting around the bases in the summer softball league Chris + I are playing on.&#160; I hobbled around for about a week but was able to swim + walk, pain free.&#160; I definitely didn’t want to overwork my quad so I kept my workouts a bit easier.&#160; Then, about 2.5 weeks ago I had a weird sinus dizzy/nausea thing that even kept me from doing any exercise for about 1 full week.&#160;</p><p>While I was home in Ohio, I kept things pretty simple, as far as workouts were concerned.&#160; Once my sinus issues cleared up, I walked almost every day.&#160; One day I even got to walk with <a
href="http://edibleperspective.com/?p=10304">Abby Normally</a> and another with <a
href="http://ohsheglows.com/2010/06/15/be-kind-to-your-food/">Angela Oh She Glows</a>!!&#160; I slacked on lifting weights while home but still managed to bust out a few sets of crunches + push ups here and there.&#160; Whenever I travel I try to maintain my balanced lifestyle, which is not always easy.&#160;</p><p><strong>Here is how I stayed on track:</strong></p><ul><li>avoided eating out too much, but when I did I found restaurants with great veggie options</li><li>cooked a few dinners for my parents and a few for the whole family</li><li>maintained my filling breakfast routine with either cooked oats, overnight oats, or a smoothie</li><li>had a <a
href="http://edibleperspective.com/?p=10599">Green Monster buffet</a> with my family one morning</li><li>bought my favorite foods at Whole Foods</li><li>walked almost everyday by myself, with friends, or with my cousins</li><li>sliiightly decreased my food intake [but still eating whenever hungry] because I wasn’t doing my typical intensive daily workouts</li><li>stayed on the go with my mom…I honestly didn’t turn the TV on once in the 12 days I was home</li></ul><p>I also ate dessert almost every night, which I don’t typically do at home.&#160; Well, I always have some sort of snack because I’m ravenous 2hrs after dinner, but it’s usually not <a

src='http://edibleperspective.com/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' /></p><p>Yesterday I showed you the 4 boxes of couscous that Lundberg sent me.&#160; Well, last night I tried the first one out.&#160; I cooked up the Mediterranean Curry flavor before I left to babysit for the evening.&#160; It was done in a quick 15min.&#160; Then I just popped it in tupperware with a little organic white cheddar on top along with a big cup of chickpeas.&#160;</p><p>YUM.&#160; This had great flavor!!&#160;</p><p><a

href="http://www.lundberg.com/products/couscous/mediterranean.aspx">their couscous</a>.&#160; The nutrition facts are great and it’s GF and vegan!&#160; You could definitely use this for other things too…like making stuffed veggie peppers.&#160;</p><p>The only thing I didn’t like was that it was a tad dry.&#160; I might have cooked it 2-3min too long, or it may just need 1T of oil added to the boiling water to moisten it up a bit.&#160; Overall, I really enjoyed it!</p><p><a

title="(5 of 5)" style="display: inline" height="353" alt="(5 of 5)" src="http://edibleperspective.com/wp-content/uploads/2010/06/5of5_thumb.jpg" width="530" /></a></p><p>So now I’m trying to get <strong>back to it.</strong>&#160; Back to my normal work out routine that is.&#160; My quad is feeling much better, so yesterday, after a 4 week hiatus I hopped back on my road bike.&#160; I went for a 12 mile ride at Wash Park.&#160; The first loop was terrible.&#160; I felt so out of it!&#160; However, after the 2nd and 3rd loops I got back into the zone and finished a total of 5 laps = 12 miles in around 45min.&#160; I came home and lifted.</p><ul><li>3 sets bicep curls</li><li>3 sets pushups</li><li>3 sets various kinds of crunches</li><li>3 sets of overhead shoulder press</li><li>3 sets of front raises</li><li>3 sets of lateral raises</li></ul><p>And then I foam rolled for about 15min.&#160; And that felt glorious!!!</p><p>Today I hopped in the pool for what seemed like FOR-EV-ER but was really only 40min of swimming.&#160; I definitely felt a bit out of shape in the pool, even though it’s only been 2.5 weeks since my last swim.&#160;</p><p>Then I came home and stuffed my face with lunch!&#160; Ann is about to come over to watch So You Think You Can Dance + Sushi + Wine and I couldn’t be more excited.&#160;</p><p>I also got a phone call from the huz today…woohoo!!&#160; It was only about 3min long but so good to hear from him <img
