Thank you all SO much for your congrats + well wishes. I truly appreciate your support. You have all helped get me to this point. So, thank you again! ![]()
….
I got a lot done this morning and was itching to get outside for a bike ride. I haven’t been on my bike in a little over a week [except for an errand or 2]. It was around 90* and super sunny by noon. It’s not quite as bad with the wind in your face though!
I thought I would take my point n’ shoot along with me today.
Start.
The Cherry Creek Bike Path is awwwesome. It only takes me about 1 mile to ride to it and from then on, you don’t have to deal with traffic or crossing intersections. The Cherry Creek runs most of the way along the path as well. I don’t bike [or run] with music, so I really like hearing the little mini waterfalls + nature noises.
There were 2 detours on the route today, which were pretty annoying! Riding through gravel/loose dirt on a road bike is not fun.
And then after, once you’re back on the path, your tires are slippery from the dust + debris.
You can barely see the mountains but they’re there!
After ~22m, I tossed my bike to the side, legs feeling like lead, and took off on a little barefoot jaunt. I ran somewhere around 300-400yds [like the other day] and felt great. I’ll probably up it a little next week!
I love that I match my shirt.
Apparently I can’t keep clean while riding my bike.
Time for 20min of yoga for cyclists, from yogadownload! I have been doing this all week, each morning but today I waited until my ride was over. It was fabulous. However, I was literally about ready to chew my arm off for lunch!
Kenna seriously LOVES the yoga mat. Everytime I stand up, she lies down.
Ugh.
Then, after lunch, the dogs watched me get some work done.
See! I told you…loves that yoga mat!
I did a little work and then needed to go to WF to pick up a few ingredients. We have friends moving to DC next week, so tomorrow we’re going to a cookout to say goodbye!
It was SO HARD to get back on the bike and pedal to the store. It’s not far, but it was hot + I was tired. However, I am still enjoying getting around on bike, so that motivated me to go!
That is the end of my point n’ shoot adventures.
…
Here’s some food from today!
I could NOT decide what to make for breakfast. I wanted a smoothie but also a banana scramble. Typically I make a banana scramble sandwich but that plus a smoothie would be way too much food.
So I bring you, the naked banana scramble.
Simplified Banana Scramble
- 3T rolled oats
- 2-3T milk
- 1t cinnamon [I like a LOT of cinnamon]
- 1/2 banana
- 1T wheat germ
- 1T pnut butter
- Mash with a fork.
- Heat + grease a pan over medium heat.
- Plop scramble into pan and flatten out a bit.
- Let cook for 3-5min and flip or mash and brown on the other side.
I thought the banana scramble I made a few days ago was the best ever, but this just topped it! I topped this with Crofters Blueberry Jelly + Wallaby plain yogurt.
I gave it a go at another Kale Green Monster.
This was not as good.
Drinkable. But not recipe worthy.
Typical Ashley salad.
I’m still obsessed with the sourdough. It makes the best toast!! Gaaah!
Delicious egg sandwich! Two pour, poke + spread eggs + a little Organic Valley white cheddar + s/p. The bread made this sandwich better than ever!
Like Mary Poppins!
All of this fit in my backpack. I thought it was a pretty good haul by bike!
I love these bars and they were on sale for $1. I’m pretty sure they’re normally $2.99, so this was a fabulous deal. They are similar to Larabars but I like the texture + flavors more. I’m still on the lookout for the new LB flavors though!
I bought black quinoa today! I’ve never seen black, only red + white. It has the same nutrition + cook time, however it was cheaper and I wanted it for pretty color ![]()
I’m using a 1:1:1 mix of black quinoa, white quinoa + millet in the dish I’m making for Saturday night.
Along with other delicious things.
Raw pesto fail.
Roasted. SO amazing. It was hard to keep my hands off these!!
Pretttty.
Night! ![]()

Fun adventure! I love bringing my point and shoot out when I’m biking. What a long ride, awesome!!
Everything looks so fresh and amazing. I would eat that whole tray of roasted tomatoes, what did you use them for??

I found the new Larabars! I’m gearing up to send a few care packages, are you interested?!
and, off-topic, do you have any family still in Marshall? the oil spill is all over the news here and it made me think of you!
and matching your shirt = makings of a good workout.

Love your dogs! All of your pictures are so great, I don’t know where to start!
The banana scramble pancake thing looks delicious! I may have to try that this morning. I have all the ingredients!
I’ve never tried those raw revolution bars but have always looked at them in the store. The cashew sounds good!
Your tomato picture is beautiful.

SOunds like a great ride! It’s amazing how good yoga feels after a long hard workout!
Wow, I really really need to try this banana scramble. You have me fully convinced it’s phenomenal!

I LOVE roasted tomatoes. They make me swoon

22 miles? That’s quite the bike ride! I’m sorry if you’ve posted this somewhere else, but I was wondering how long it took you to get up to riding that far as an everyday workout (more or less). I’m really interested in expanding my workouts from just running and the occasional swim (getting better!) to biking and maybe a litle strength training.
Any tips for getting better at biking that you’d be willing to share? Nothing extreme – I don’t want to compete, I just want to be able to do something like 10-20 miles for a workout and feel as good as I do when I get done with running. Thanks!

I haven’t posted about that before actually. Do you have a road bike or mountain bike? I don’t ride really big hills or anything. My first time out I rode about 8 miles around the local park. Then the next few times, I would just up it by about 2 miles. I really get in the zone when I’m biking. If you’re mountain biking on the road, I know that is a lot harder and takes longer. I don’t know that I really have many tips except for slowly upping your mileage each time you go out!

Wow Ash. That might have been your all time best post. Tons of content. Loved the shirt and your color being the same. Loved egg samich and green kale monster and, well, I’d better stop.

I noticed you are using parchment paper when you roasted the tomatoes. Is that for easy clean up?

Yes. I use parchment alllll of the time!

That sounds like a great workout!

I forgot to come back and comment with my congrats yesterday…but you absolutely deserve it. You have a real talent…even if your kale smoothies are sometimes less than stellar.
Have a great weekend!

Getting ready to go on a bike ride myself and you just motivated me even more; thanks! Can’t wait to see that quinoa/millet dish!

That is really funny you mentioned black quinoa. I was in WF yesterday & noticed it for the first time, as well. Curious to hear what you think of it.
Regarding the Lara Bars, as I mentioned I found them at Vitamin Cottage (downtown location). I tried the PB & Chocolate yesterday, while sitting in the doc’s office. IT was pretty good. I am not a huge bar person, but it tasted pretty good.
Let’s find some time to meet up, SOON!!! Have a great weekend, Ash

Loved all the photos. The egg sandwich looked so good – I may be making one for dinner tomorrow! I too had a so-so green monster today. Drinkable, but not memorable. Still, even a blah green monster is worth drinking. I love the way they make me feel.

I sometimes can’t see your blog/pictures on Google Reader. Just wondering, I think I saw someone else had this problem too. I don’t know if it’s the browser I’m using (Chrome) or what…! It’s sad because I love your blog and your pics!

It looks like you have a really gorgeous place to ride which is local to you; it must help get motivated when you have such good scenery. I think roasting tomatoes is probably the best way to cook them, it really concentrates the flavour.
