I woke up ST-aaarving this morning!!
Time for…BREAK
…FAST!
Creamy oats with 1T cocoa powder for a little twist..YUM. Topped with the last of Heather’s jam, Maple Cinnamon Almond Butter and a little splash of almond milk. Guess what my favorite part was
Helllooooo delicious glob of AB.
I worked again today and we were SLammed!!! Exhaustion is setting in and another 9hr day tomorrow. Eeek! I’m keeping this post short because I really need a good night’s sleep.
Lunch tiiiime: Side salad: romaine + sweet peppers + tamari roasted pumpkin seeds + shredded zucchini – I created my own dressing with:
- lemon juice
- apple cider vin
- olive oil
- balsamic
We have a sushi “restaurant” in our WF. There are over 20 bowls you can get made with various Japanese styled foods. The sushi is made fresh and is prettttty delicious. No fake crab meat here! ![]()
Shrimp Tempura with brown rice = YUM This had a nice little kick and I liked that there were actually noticeable pieces of shrimp and not just crunchy fried bread.
I got home and laid on the couch for awhile…a rarity! My dinner was quick + easy tonight using a few things like:
- quinoa pasta [delicious!!!]
- lacinato kale
- sundried tomatoes
- basil
- tomato paste
- breadcrumbs
- olive oil
- s+p
Basically I cooked the pasta and then cooked all of the other ingredients in a pan and threw it on top. It was done in 15min, with prep and totally delicious and satisfying. Also accompanied by an arugula side salad. mmmmm
Don’t worry, these were just my main meals of the day!
Off to relax a little more + then hop into bed! Anyone have a super fun Sunday planned? Super fun can equal laying around the house relaaaaxing.

I love your breakfast cups! Where did you get those again? So much more fun to eat oats out of a cup in my opinion. Your salad with peppers made me think of this:

holy yum, the sushi looks soooo goooood! Rarely do I come across sushi places that use real crab meat. I think that’s the reason I don’t go out to eat it so often anymore!
