I don’t know what happens some morning….but today my oatmeal was PERfection. It’s always good. But this was beyond good. Sometimes I think it’s weird how much I talk about oatmeal…but come over and I’ll make you a bowl + then you’ll get it.
Peanut Butter + Coconut Butter melted lava flow
OH MY OATS:
- 1/3c oats
- 1c almond milk
- 1/2T chia seeds
- 1/2 banana
- 1/2t cinnamon
- vanilla splash
Topped with:
- 1T pnut butter + 1t coconut butter, melted
- 1t Heather’s jam
- other 1/2 of the banana
- about 2T BRM coconut granola
It filled me up…but was so good I considered making another bowl. I think I really liked the banana on top. I also liked melting the pnut butter over top with the coconut butter. I usually use 1/2 water 1/2 almond milk but today I used all almond milk.
I had a pretty low-key day. I finished up my THIRD article..wahoo!! Check it out and let me know your thoughts!

Lunch was about as delicious as my oats.
Romaine + ~1/2 avocado + leftover steamed broccoli + 2 mini sweet peppers + herb roasted garlic + homemade balsamic vin.
Chocolate Coconut Monster!!!! This was SO delicious…probably one of my favorite ever!
Chocolate Coconut Monster:
- handful of ice
- ~1/2c coconut kefir
- 1 scoop chocolate Amazing Grass
- 1/2T unsweetened cocoa powder
- 1t coconut butter
- 1-2T unsweetened coconut flakes
- 2T avocado
The avocado made this insanely thick and creamy and you couldn’t taste it at all. Love love love.
I was feeling a bit sluggish…a little cloudy in my head. This smoothie really helped perk me up..for real!! I went to the gym, awhile after lunch, and rode the stationary bike for 45min. I had the new issue of Real Simple, which kept me busy and I read another 20 pages in the book Born To Run.
Tomorrow morning I’m meeting with my friend Lauren and going to the farmer’s market. Super excited about that!! More tomorrow

Coconut butter is my FAVORITE on oats. It’s like creamy at first then hardens and I just loves it. I love mixing it with Dark Chocolate Dreams – that is pure perfection.

Girl. About a month ago I posted about mixing PB + cacao bliss with banana and shredded coconut. Holy cow was that good…and the sandwich was cold in the car while we were snowboarding…The cacao bliss turned into a crunchy shell…OMG SO GOOD.

That’s the problem with oatmeal – it is just so yummy it’s hard not to want more all the time! Thankfully I usually just prepare enough for one serving…otherwise I’d be in troubs.

I have a confession: I don’t like hot oatmeal. It just sits like a rock in my stomach, I feel. But I think maybe I need to give it another shot–your bowls always look amazing!
Hooray for the farmer’s market. I’m so glad you told us about that place. We went last weekend and immediately signed up for a CSA with one of the farms. You might see my husband there today…he gets to go and pick up milk while I’m working today. Enjoy the day–looks like it’s going to be beautiful!

All of the food looks scrumptious!! It’s making my mouth water as I didn’t make oats for breakfast today (but totally should have… grrr.) and am hungry after a tough spinning class.
Hope you had fun at the farmers market! I’d love to see what you got and what was at the market by you.
I was going to go to the one near me but there wasn’t a whole lot in the weekly newsletter that I wanted (there were lots of muffins, meat, and arugula – I love arugula but I love it so much that I grow it myself so it was a no go for me today. Hope you found some good things!!

I want your salad
I agree on the amazingness of OATS! I only have time for them on weekends (sadly) because I won’t eat them unless they are stovetop. I seriously look forward to my weekends for that bowl or empty jar of oats. I convinced my husband to let me make him some one day and he was instantly sold. Its the stovetop method + awesome toppings/mix-ins that makes it so fab! Your oats always look amazing – minus the bananas of course

Your photos are amazing and I’d come to you house for oats on any day. Your post mentions melting peanut butter with coconut butter – same as coconut oil?

Coconut butter is made with the actual meat of the coconut. It retains a lot more of the nutrients because of this. I still use coconut oil for many different things, but I use coconut butter quite a bit now too but mostly as toppings on things. You could compare it like peanut oil + peanut butter. The oil comes from the flesh. The butter still is still over 1/2 oil but has the meaty flesh mixed in too, which holds the fiber/vitamins/minerals.

Oats are most surely, a gift from God. Satisfying and most surely good for you, they can be changed up in so many ways, and still be good for you–so many wonderful, as you’ve shown, things to add and enhance an already wonderful grain. Cheers for the wonderful photographs, too.
