suuuuuperrrr maaaan

Again…SO much to talk about!  I could filter, but I choose not to….

Ready……GO!

I ate my Green Monster SIAB Kath style.  I’ve never really done this before [except with the Rush Bowls made at the store] and I enjoyed it SO much more.  Here’s why:

  1. Kept me eating longer.  I tend to guzzle this so much faster in a cup!
  2. My hands didn’t get cold holding the glass.  Major PLUS in the AM when it’s chilly!
  3. I got to use a fun spoon and SLURP my way through the bowl.
  4. You can’t really have granola topping when it’s in a glass…choke!

Not sure I’ll ever go back to drinking these from a cup, unless I’m on the go!  We’ll have to see :)

By the way, this was possibly my best Green Monster, with the pumpkin spice in close 2nd.  Holy.Moly.

Why so many photographs on the Cook’s magazines?  It’s a bright + fun backdrop and I have no money for new placemats/towels right now :)   Aaaand I have about +5yrs worth of these babies…so get used to it.

Suuuuuper Green – Green Monster 

  • 1c Ice
  • ~1c Rice Milk [or any milk]
  • 1/2 pack of vanilla rice protein powder [opt]
  • 1T chia seeds
  • 1/2t cinnamon [gotta get in my daily dose!]
  • 1c. frozen strawberries
  • 1 small banana
  • 2-3c spinach
  • 1 pack Amazing Grass Organic Wheatgrass

Topped with: 2T Bob’s Red Mill Muesli + 2T Back to Nature Pumpkin Seed Granola

  1. Blend on med/low until ingredients are combined and then blend on high for ~30sec until the frothy.

Enjoyed with a soup spoon.

If you’re curious, this smoothie had NO wheat grass taste or texture at all.  It is a great beginner green smoothie.  You can pick up the single packs to experiment with at Whole Foods and many other health stores.

Even though Kenna + I are not on speaking terms, she is pretty darn cute.  She LOVES my yoga mat.  I however don’t appreciate the mess of fur that she leaves behind.  Why are we not on speaking terms?  Well, I won’t get too specific…but…said dog may like to eat brown stinky things she leaves on the ground outside.  You know, if you eat too much of anything…it’s going to come back up.  Use your imagination and then think about cleaning it off of the kitchen floor + entry rug + dog bed + upstairs carpet.  GAH!!!!!!!!!!!  FAIL.

Now whaaaaaaaaat!?  I did a bunch of crapola during the day, ie: applying to jobs, changing resume around, emails, errands, etc.  I seriously stay SO busy with no job.  I guess that’s good though!

Love love love the texture + flavors of this loaf.  Katie pointed out this loaf looks moist and then said how “loaf” and “moist” are not appetizing words.  I completely agree.  I don’t like the words “meat” “loaf” or “moist.”  But what shall we call this!?  Lentil Pie? hehe ;)

With a side salad + a piece of WF whole wheat toast swiped with AB + jam [hard to see the AB on there!]

I want to talk about the Vibrams but I think I’ll save that for a hopeful daytime post tomorrow.  Although I have a ba-jillion things to do as we have more company coming again.  [2 of Chris’s friends from NC]

I will answer 1 question though.  Megan wanted to know how I fit my toes into the fingers with socks on!? 

Answer: Creepy finger socks that fit into the creepy finger shoes!!!  More details to come!

I went for another run today, which might not have been the best idea since yesterday was my furthest run in the Vibrams.  I stopped to walk 3 times, during the 3 miles just to give my feet a little rest.  I feel some stress [not really pain] on the top of my foot, about 1-2” down from my last 2 toes.  I don’t want to get injured so I’m playing it safe.  Running on your toes works all different muscles and it takes some time getting used to!

I also did a speedy but effective Whittle My Middle:

  • Front Plank + Side Planks – 45sec
  • Torso Twist – 24 reps with 10lbs
  • Bicycle – 65 reps
  • Plank Ups – 16 reps
  • Boat Pose – 24 reps

A party!  Happpppy Birthday Hovan!

The theme was Southern Potluck.  so.much.fun.  I made Kelsey’s Slaw from our 24, 24, 24 night!!  WF was out of purple cabbage, which is much prettier.  Oh well, it was still super tasty.  I love that it’s not full of mayo [just a touch] and has a nice sweet vinegar flavor.

I also made super easy beer bread that we made that night too.  It is pretty delicious fresh out of the oven but I found that the texture gets a bit tuff the next day.  Maybe it’s the beer?  Not sure…

Ann’s plate was prettier than mine.  I had pulled pork but no bun. I knew dessert was coming and didn’t want to be full!  I also had slaw, crazy delicious baked beans, corn chowder, and beer bread. Comforting + delish.

A few random things…

  1. Kath asked if you can omit the Kombu in the lentil loaf recipe.  Yes, definitely.
  2. In subbing Arrowroot for cornstarch, you need to sub 2:3 [2T arrowroot in place of 3T cornstarch]
  3. I’m making a tab at the top to organize the CO blogger meet-up on Feb. 13th.  It will be much more organized this way :) Everyone can leave comments if they are coming + what they are bringing.

    This loaf looks way too good to be true! Glad you can eliminate the Kombu because I don’t think I’ve ever heard of that one.

  • I just bought some Amazing Wheatgrass on Monday- the sample packet. I think today is the day to try it! And I’d agree that Lentil Pie is a bit more appetizing :)

    So I am really hooked on Oatmeal Chocolate chip cookies too and my husband has a great recipe for them! here you go!

    Steve’s Oatmeal Choc chip
    1 3/4 cup All purpose flour (or mix with a little wheat)
    3/4 t baking powder
    3/4 t baking soda
    1/2 t salt

    1 cup butter or non dairy spread (we always use non dairy butter)
    1/4 cup sugar
    1 1/2 cup brown sugar
    2 eggs
    2 1/2 t vanilla

    3 1/2 cup oats
    1 cup coconut
    1/4 cup flax or chia seeds
    1 cup chocolate chips ( we use whole foods brand because it’s non dairy)

    Start by creaming together the butter, sugars, egg and vanilla. In a seperate bowl mix all of your dry ingredients together (flour, baking powder/ soda and salt).

    Mix dry ingredients into wet and then slowly start to add your oats a cup at a time so they mix in well. once mixed you can add your coconut and flax/chis until well blended. Add the chocolate chips last and mix.

    cook at 350 for about 10 ish minutes? they start to spread out and you can smell them when they are done. Steve does not believe in pre heating the oven and just puts them straight in when he turns the oven on so you may have to play with the cooking time a little bit. You can tell if it’s too high if the outsides are brown and the middle still looks white ish.

    We roll them into long cookie dough logs and freeze them so we can have fresh baked non dairy cookies any time we want. then when we are ready to eat them we just cut pieces off the log and put them straight onto an ungreased pan. when they are frozen like that you cook them at 325 so they have time to defrost.

    Now that I’ve had Steve’s cookies I don’t buy cookies out because his are great. It’s hard to find good non dairy cookies in the store so this is our experiment turned amazing.
